In one of those adorable Instagram reel videos, actress, model and author Padma Lakshmi shares the recipe for her High Protein Chickpea Spinach Salad.
“This is a vegan recipe,” she explains in the video.
“This way you get all the protein you need with very little effort. I’m not sure why it’s so good with just boring ingredients.”
Let’s take a look at the “boring ingredients” and how she prepares the salad!
Chopped red peppers
Spring onions – 2 tbsp
Black Pepper – ½ tsp
Salt to taste
How to prepare?
Step 1: Rinse and dry the chickpeas.
Step 2: Place the chickpeas in a large mixing bowl. Add the chopped red peppers.
Step 3: Sprinkle with 2 tbsp spring onions.
Step 4: Drizzle some olive oil over it and squeeze some fresh lemon juice.
Step 5: Add fresh spinach leaves and mix everything together. Add salt to taste.
Step 6: Sprinkle some black pepper powder and throw again. Voila! They have the salad that Padma Lakshmi has had for about 20 years!
